Chile Saltpeter
Sodium nitrate is a white crystalline solid that is soluble in water and has a salty taste. Sodium nitrate is a common ingredient in fertilisers and is used to improve crop yields. It is also used as a meat preservative as it prevents bacterial growth and helps maintain the red colour of meat. In industry, sodium nitrate is used as an oxidizing agent in the production of nitrocellulose and as a raw material in the production of nitric acid.
