Hops is a genus of plants in the hemp family. It is used as an aromatic and preservative in brewing beer and is believed to have been used in beer production since the 11th century. Hops contain several flavonoids, such as humulone, lupulone and xanthohumol, which have a bitter taste and contribute to the desirable aroma of beer. It also contains acids that act as a natural preservative.
